I am still running on Joomla 1.0.0 and would like to upgrade it to the latest version release Joomla 1.0.7.

Is there any shortcut to this or do I have to upgrade from one release to another?

Luckily, you can just install one patch that is available here, otherwise it would be quite a lot of work :). You can take this patch for example: Joomla_1.0.0_to_1.0.7-Stable-Patch_Package.zip
