Upgrade Joomla_1.5.0_to_1.5.26-Stable-Patch_Package

What all gets changed if I upgrade from 1.5.22 to 1.5.26? Do I lose my templates, plugins, etc if I overwrite all files? Can I just take a partial upgrade of the security files?

You don't lose anything unless you have modified core files or the core templates.

I upgraded to Joomla_1.5.0_to_1.5.26-Stable-Patch_Package and it still says I'm on 1.5.22

This could be a cache issue, try flushing the Joomla cache and delete your browser's temp Internet files.
Could be the upgrade files were uploaded to the wrong location. This has happened to me in FileZilla where you have a folder selected on the right in the destination window and when you drag the files/folders from the left they go to the selected folder rather than the folder you were in. Have a look in your root sub-folders for a "CHANGELOG.php" file, I think this file is included in every upgrade file set and there should only be the one copy in the root of your site.

The other possibility is that you have multiple sites on your Host server and you have uploaded to the wrong site folder.

Just upgrade to 3.3.3. 1.5 is end of support and 3.3.3 is better anyway.
