I've noticed that some extensions produce directories that do not contain index.html which makes it possible to browse the directory structure in firefox or any other browser as long as someone can figure an entry point (which is very easy to do).

I'm pretty shocked that a couple of very popular extensions do this - it's unsettling from a security POV

Unfortunately the number of folders that need to be updated is vast and it will be time consuming to do by hand.

Anyone know of a way of automatically populating directories and their sub-directories with index.html files? is there an extension for this or a Joomla feature that allows this?

excuse me while i have to be very careful how i word this...
Yes there are scripts available on the web that will be able to do this but morals prevents me from naming any or suggesting places to look.
Next i hope that you have reported these extensions to the jed/and developer and when the developer release any new versions, you install them

As you rightly say, a properly set server will not allow directory listing and is a simple switch in cpanel or via the htaccess.
