How do I delete the excess templates that I will no longer use?

Extension Manager -> Install
Then click to the appropriate tab for "Templates", check/select the template and "Uninstall".

I do not see an uninstall or delete button to remove the template

There is another way to do this:
Remove the template folder from the server through FTP. It's more direct.

for Joomla 1.6.1 it is little different when it comes deleting Template from Joomla CMS start clicking on
Extensions => Extension Manager => Manage
then on the upper right side you have four drop down list the second from right is a Select Type, drop the list and click on templates
when you have the templates list, select the template that you would like to uninstall then click uninstall.

Thanks for this. The same in Joomla 2.5.
