Greek language and Mambelfish

Hi folks
I have posted this question on the old mambo forum, but I think it's better to add it here again.
I'm using mambelfish with other 12 languages (most of them use western encoding ISO-8859-1).
I can see now here, on forum, that we still have ISO-8859-1 and it's working perfect.
My question is how to manage these languages with mambo, because if I use the existing greek translations the text become messed and, if I try to force the encoding on template, it won't works.
Anyone has used mambelfish with greek and other languages? How to manage it?
