I went to this page and viewed the available download files:

joomlacode.org/gf/project/joomla/frs/?action=FrsReleaseBrowse&frs_package_id=6311

I currently am on 1.5.18, and there is no file listed for 1.5.18 ---> 1.5.26, so should I just use Joomla_1.5.0_to_1.5.26-Stable-Patch_Package.zip ?

Yes you should use the 1.5.0 to 1.5.26 package. You also have the option of installing Admin Tools which has an update feature among other things:

And if for some reason you must know what files have changed, etc. you can still find patches at http://docs.joomla.org/Joomla_1.5_version_history.

Give Admin Tools a try and remember to backup your site before updating and installing extensions. You can use Akeeba Backup for that:

Ok, good. Can I do this upgrade from within the Joomla Admin interface? Or is it suggested that I unzip the file on my computer and then FTP everything up to the server?

In Joomla 1.5 you must use an extension (i.e. Admin Tools) to update within the Joomla Admin Interface. After installing you would access your back end and browse to the Admin Tools component to use it (you can read the documentation on their site).

If you download patch files then yes you would use FTP to upload the files.
