How du I change the text "you are here"?

You have to edit the language string shown (between double quotes) that is available in the file en-GB.mod_breadcrumbs.ini that is located in the directory \language\en-GB.

Note:
(a) It is assumed that your site language is en-GB. If not, change it the directory and file name accordingly.
(b) Being a core Joomla! language string, suggest using the override technique as documented at http://docs.joomla.org/International_En ... _Overrides.
