Our company's joomla website has a jobs module on joomla 1.0. We are currently upgrading our website to 2.5 and it a snag with one thing. Is there a way we can upgrade our jobs module without starting completely over and re adding all of our jobs?

The jobs data is likely stored in tables in the database.

You should be able to export the tables from Joomla 1.0 and import them into Joomla 2.5 using phpMyAdmin or a similar tool so that the Joomla 2.5 version of the module will recognise the data.

The developer of the module should be able to advise the best course of action.

If not, do a backup of your Joomla 2.5 website and give it a try anyway.
