WhenI install J 5.0.3 and select English Canada and the language, why do I not see it installed when I log in to Languages: Installed (Site) and / or (Admin)?
I only see English UK.
Why offier the choice when installing Joomla?

It is a very good question, probably with no answer.
The language stings for Joomla are organized as following:
(a) Installation strings (under the folder \installation\language\xx-YY where xx-YY is the language code). The language strings here are used only for the installation of Joomla! They have no bearing on the availability of respective language packs (administrator and/or site). So, even if the language pack does not exist, one can install Joomla in the desired language. Of course, one has to weigh the usefulness of this approach.
(b) Language packs - As you are aware, they are installed just like extensions and are available in a separate repository as installable packs.
By default only en-GB is installed as it is native to Joomla! If one wants to install a specific language pack during the installation process, it has to be done towards the end of installation.
As you are eluding to, it would be nice to have the appropriate language pack installed (if one available) that matches the language selected for the installation.
I would suggest creating a feature request at https://issues.joomla.org/.

Is there a difference between Canadian English and UK English? I would have thought Canadian English would be more aligned to UK English (in terms of spelling, and grammar) than US English.

If the chosen language during installation is for installation only then what language is displayed to them in admin?

Yes, the EN-CA would more align with EN-GB. I couldnt say whether there is a difference other than the flag displayed in the Language Switcher. I suppose I could just replace the EN-GB flag image and not worry about the CA language pack.
I just tried another fresh install using EN-US as that was what was presented when the installer opened. When I login to the back end, the only language under Languages: Installed (Site) is EN-GB - no sigh of EN-US - hence my original question.
When installing additional languages, EN-CA is available from the Joomla backend and it is available for download at https://downloads.joomla.org/language-p ... ns-joomla5.
