Is it possible to override a plugin?

I haven't heard about this issue yet, that one could override plugins,
but what you can do is override components and modules inside of your own templates.
Some information about that you can read it here:
http://docs.joomla.org/Understanding_Output_Overrides
But if you want, you can create your own plugins.

Has there been an update to this for 2.5? Can we over-ride a plugin, if so how and where is the documentation for it. If not why not
