Updated my Version- didn't change though

i downloaded an update (3.1) for my old version of joomla (1.0.11 Stable [ Sunbow ] 28 August 2006). The files were saved in the 'downloads' file but how do i get it where i'm editing via new version of joomla instead of still using the old one? The old one I'm currently using has a lot of kinks and bugs. For instance, I can't even delete media content and some of the '.jpg' files won't show an image. I was told a newer version of joomla would fix my problems but I don't know how to get the new version to pull up. When I log on through IE's admin login page- the 1.0.11 version shows up. So confused. What am I missing? Help!
