I'm not sure (nor am i bothered) which is gramaticaly correct but it hurts my eyes to see it being spelt 3 different ways on the same page. The same is true for the word official.

Depends upon where you use it. By itself it could be T-Shirt or t-Shirt - really the t is not a word, per say. In a sentence it would use all lower case. ignoring my grammar incorrect sentence above.
T-shirt is a derivative of tee shirt so should actually be t'shirt and if its the first word in a sentence should be capitalised. then we move on to if its a noun, pronoun or adjective.

For the record, we've sold 875 men's black *T-shirts* to date, so I think the spelling we've been using has worked out just fine.
