Which folders can I exclude from Joomla backup?

The question is quite simple (and perhaps it is trivial), but I did not found a straight answer on the Internet, so ...

Which folders can I safely exclude from Joomla backup?

The most simple answer is "None". If you wish to restore a site from an Akeebabackup or any other backup and you wish a proper working site you need the full backup with all files and folders

The one folder that's not necessary to backup (and it's excluded by default) is the folder used to store the backup files. Apart from that, the question requires a knowledge about what folders are on the target website and what they're used for. I don't know how many folders exist on a typical J! website—several hundred, I would imagine—and the answer may differ from website to website.

To be conservative, backup everything; that the simplest answer. You could exclude "temporary" things like /cache and /tmp (if you want) but, as @Leo says, you may need them in future.

I basically agree with that remark though one should never store a backup on their site but always backup to an external source such as Amazon S3 (ridiculous cheap). The reason is simple. If the site crashes or the server's disk fails you have no more backups.

I would like to exclude /logs and /tmp and /cache to save space during incrementa backup.

In this case, is there any chance that I being not able to restore the site?

You are probably safe (that is, you will have no problems restoring your site from a backup) if you exclude those folders from the backup. I exclude a number of folders from Akeeba Backup (including the ones you've mentioned) and I haven't found any problems with the restoration process.
