Site went down because of session.save_path in user.ini

Had the same issue. The site was running php 7.4 and suddenly went down in the middle of the night. We found the user.ini file with a directive: session.save_path = "/var/cpanel/php/sessions/ea-php71" and changed the 1 to a 4 and that fixed it.
What we don't understand is that
1. the user.ini file says it is cPanel-generated, so why does it have the wrong php version in its session.save_path directive, and
2. Why did it go down in the middle of the night this morning when it has been on php7.4 for months? and
3. Will cPanel somehow revert it back to 7.1 through some process?

Still searching for those answers.
