To minimise security risks, I'd like to disable extensions, modules, and plugins that have not been used for a long time, in doing so maybe if something doesn't work I'll remember why I installed them in the first place..
Any suggestions how to go on about this?

Extensions >>> manage >>> manage ... order ID descending. The latest installed will be at the top. afaik there is no easy way.

Oh, okay, that would not necessarily work, just because a plugin was installed ages ago doesn't mean it's not being used, I was hoping for a "last used", like there is on mobile phones for instance.

Had a quick look in extensions.joomla.org but cant find anything that does that. You could try examining your server logs?

Short answer to the question: "Is there a way to check unused extensions/modules/plugins?" ... yes.
Disable or uninstall your currently installed extensions one-by-one. If nothing changes and nothing breaks then the uninstalled extension was not used by your website. If something changes (or breaks) then re-enable or reinstall the extension.

If an extension is disabled and nothing breaks it does not mean the extension is never used. It just means it was not used at the page you looked at.
To be sure the extension didn't break anything you would need to check
Every menu item
Every link in Articles and Modules
That contact emails were sent correctly
New users can register
Existing users could log in
Each time you disabled an extension.

The answer to the question, "Is there a way to check unused extensions/modules/plugins?" is yes. However, (a) there's no "extension" or tool that does this automatically, and (b) I don't know of a simple way to do this without spending time examining every page where an extension could possibly be used.
