Allowing website users to edit articles but on conditions

I was looking for a way to allow website users to edit articles from certain categories, but I don't want the changes to take effect without review from editors.
The article edited should not unpublish itself, but it'll be like creating a copy of the original article. When the editor allows the changes, then the new article will replace the old one .
Is there a way to make this work? Please

Joomla 4 has a workflow feature that allows the content to be created, forwarded for approval and publishing etc.

But as you're using J3 (or at least asking the question in the J3 forum) the closest thing I could identify is the article versioning; refer to https://docs.joomla.org/Help310:Compone ... on_History for further information.

Edit state Not Allowed ... prevents created and edited Articles of the user from being Published. Only users in groups that Allow Edit state can Publish an Article.

Thanks, @AMurray and @ WebDoggle for your feedback, but I tried both methods but not yet. The edited article, since it's published, the changes are taking effect immediately. The website is for students, and everyone can post or edit any article, but not everyone can be trusted, that's why I need this.
I can't move to Joomla 4 because I'm using Joomla 3 templates and third-party extensions (and some don't have an update yet), plus I tried to upgrade to Joomla 4 and everything crashed. Thanks, I had backed up everything.
Is there any other option? please...

I tried k2, I'm not a fan of it, but I think it's the only option I have for now. The only problem i found is that, if an article is edited, the extension unpublishes it until it's published again on the backend.
It's a fair one considering it's the only thing i have that is close to what i need. Thanks for your time, and incase of any other option i'd like to know.

Then set (for the user group) Edit state Not Allowed and the Article when edited will not be published until you publish it.
