Read more in wrong language

Hi, me again, sorry...
My site language is Italian, my administrator language is English (I'm English).
I have added language overrides to all the examples of "Read More ..." I can find, see attached images, the English (UK) - site. In the Italian - site everything I found was correctly labeled "leggi tutto".
Then I looked through the forum and found an answer saying that language debug was on, so I tried that too (it was off). The second image shows what then came out (and obviously with the debug language turned on I had asterisks all over the backend which is horrible).
So with the debug on it says "??JGLOBAL_READ_MORE??".. I looked on the joomla help page for language debug and it gives me this "??Joomla CMS?? (text surrounded by pairs of question marks) indicates that the string is translatable but no match was found in the language definition file." Why isn't it found in the language definition file?
I had already added an override for that entry (JGLOBAL_READ_MORE) in the English (UK) - site.
I have 2 templates in use, Cassiopeia (parent) and Shaper_Helixultimate (default for styles).
This is probably going to be easy for someone but I'm completely stuck.

Have you installed the Italian Language Pack?

You are Overriding the English Language (en-GB)

Are you planning a Multi Language Site?

Yes the Italian Language pack is installed (see image attached).
I have the site in English for the backend and Italian for the front end.
I put the overrides in the English language because in the Italian - site it's all correct (the Read Mores that I found were all labelled correctly in Italian with "Leggi tutto". If I look at the page source it says "leggi tutto" but I actually see "read more" on the front end..

Version 3.8.1.1... Updating will very likely solve the issue.

Install the Italian Language Pack for J4. The one you got is for J3.
