How to swap out accessibility icon?

This has been asked before but it was not detailed how exactly to do it. I need to swap out the default J4/5 accessibility plugin icon of the wheelchair for the universal web accessibility icon. Here is a post that describes the same question:

And even a post on the Joomla issue tracker:

But neither shows how to actually change the plugin icon. Could someone guide me on how to do this?

If you're using "Google Material" icons, you can use this code in your template:

$this->addScriptOptions('accessibility-options', ['icon' => ['img' => 'accessibility']]);
If using emoji icons, you have to override accessibility.js scripts because the emoji is hardcoded there and there is no option to change it.
