What happened to the old Article Trash Can
Using Joomla 3.8.5 and can't find articles that were sent to the trash can in previous edition of Joomla.
Is there any documentation on this?

It hasn't gone anywhere......
To confirm my understanding of your question...... are you saying you had articles in the trash in say V 3.8.4 on upgrading to 3.8.5 are no longer there, or that you simply can't find the trash button on the menu/tool bar?
You should see the normal trash can in many of the 'content' list screens like articles, modules, menus etc (as illustrated above).
If you can't see the trash can at all, check the plugin for it is enabled, search under the Plugin list.
To confirm my understanding of your question...... are you saying you had articles in the trash in say V 3.8.4 on upgrading to 3.8.5 are no longer there, or that you simply can't find the trash button on the menu/tool bar?

Note the screenshot shows the "better trash" plugin from Regular labs, but the normal core Joomla trash button is similar.

The way it used to work was that the trash button sent articles to a special category from where you could delete or restore the items.
I can't find this any more and the trash button seems to send items to nowhere land. There is nothing hinting to where this category might be and I can't seem to figure out the newer 'Archive' function either.

It's the same thing for articles. You use the filter. Do you see the filter?

Can you reference this in the screenshot that AMurray posted above. Or at least guide me to the documentation of how the articles trash and archive works.

Thanks - how do these filters relate to the image shown above in AMurray's image above. I've already seen these docs, but tt's not at all clear how to get to these filters from the Article page, shown above. Just to clarify the image shown in AMurray's post above is exactly where I am and I've searched for the usual filters they are simply nowhere on that page. There is a trash icon which is highlighted in AMurray's post. This button seems to send the articles to some nowhereland, it doesn't actually lead anywhere - it doesn't call up a menu. The article disappears and then nothing...
The docs you linked me to seem to be identical practically to the help menu in Joomla and I've been completely through it but it isn't in the least clear how you access the filters.

Unless I have completely misunderstood your question, the "trash can" icon has nothing to do with finding articles that have been trashed. So, in terms of answering your question, please forget about the trash can icon for a moment.
I will repeat what I've tried to explain before.
1) Go to the Article Manager in the backend
2) Find the button labelled Search Tools
3) Click that button (it will display a few other boxes underneath the button)
4) Click the box labelled Search Status (do you see it)?
I will explain the next step if you see a list of options in the Search Status box.

No worries. I remember (it was nearly six years ago) when J! 3.0 first appeared, it took a bit of getting used to some of the differences in the way things operate. Fortunately for all of us, the documentation [kind of] gets you there and, for those who have trouble wading through it, there's Google. Cheers.

To add further closure on this topic, there was a new facility added to J! 3.5 that allows a one-click access to all the trashed articles within a category. To access this feature, go to the Joomla Category Manager (i.e. Content » Categories. See the following screenshot for reference.
You will observe that there are counts of all published, unpublished, archived and trashed articles. Click any of these counts to display all the articles relating to those statuses.
